Kale Quinoa Bites

So I just made these and have not stopped eating them. I've literally eaten half the tin....

Most of my spare time in the kitchen is spent making tasty treats for my boys, but today I had to make these for myself. Spotted the recipe on 101 Cookbooks and they sounded like the perfect, healthy, busy mom snack.

Super easy to make these your own by using whatever veggies and cheese you have on hand. Make them!

Sweet Potato Curry

We are swimming up here in the bay area and this constant rain calls for some serious comfort food. This is one of the best curries I've ever made and I love adding a great recipe to my vegan file! Enjoy this bowl of warm, spicy goodness!

Tortilla Española

Right before our little boy was born, we took off to Northern Spain and ate everything in sight. 

Tortilla Española is a staple on the pintxos circuit and in Spain in general. It's amazing how something so simple can be so ridiculously satisfying.

A friend gave us a ton of fresh eggs, so I figured now was the time to give it a try. I was shocked that I was actually able to flip this sucker and turned out a delicious final product. Enjoy it warm, cold or with some roasted red peppers and Spanish chorizo.

High Protein Energy Balls

We've renamed these hippie kiddie goo balls. They're the perfect snack! Such a great way to sneak a little extra protein into the kiddos. They kinda taste like peanut butter-chocolate cookie dough bites - you'd never know there are chickpeas in there! Love!

Miso Sweet Potato and Broccoli Bowl

Add this to the list of dinner salad/grain bowls. Love this one from Smitten Kitchen adapted from Goop. Great sesame dressing and we like ours with some shredded rotisserie chicken and raw spinach on top. Another easy weeknight dinner!

Pasta with Kale, Lemon and Toasted Walnuts

I got a little kale happy at the store the other day, so I had a drawer full of kale to use up. Found this simple pasta recipe and had a great dinner ready in no time. Love the bright, cheesy, lemony flavor!

Asian Salmon Bowl with Lime Drizzle

We love eating salad/grain bowls for dinner and this one is part of the rotation. They're great because you can mix and match your veggies and grains depending on what ya feel like and the lime drizzle would be tasty over any kind of protein.

Shrimp Creole

I called my brother the other night while he was making Nola Cuisine's shrimp creole and it sounded so good that I made it the very next day. Definitely take the time to throw together your own creole seasoning, but if you don't feel like making your own shrimp stock - simmer your shrimp shells and tails in some store bought fish or veggie stock.....it'll get the job done.
Loved this recipe because the tomato sauce is just bursting with such great flavor and serious spice. Thank you, Nola Cuisine.....and Uncle Ryan!
