Chicken Fajitas

Jason randomly said he had a taste for fajitas one night and I couldn't believe I had never made them. This recipe is fantastic and couldn't be more simple. Load the chicken and veggies into your favorite tortillas or we even threw them on top of some crispy romaine and made it into a tasty fajita salad.

Almond Butter-Quinoa Blondies

I'm constantly looking for ways to sneak a little extra nutrition into my toddler's little body. These blondies are so delicious! All you have to do is throw some raw quinoa in a blender or food processor and you've got yourself some quinoa flour.
We feel sorta healthy eating these because the quinoa flour and almond butter cancel out the butter and brown sugar, right?

Chia, Oat, Date and Almond Smoothie

Love this new smoothie I found! Great for breakfast with some fresh fruit mixed in or perfect to slurp down for a smoothie snack. I liked it because it's not as thick as overnight oats and the chopped dates sweeten it so nicely.

Short Rib Ragu

We've had a lot of visitors this summer and this recipe is perfect for entertaining guests. You can do pretty much everything ahead of time and when your guests want to eat, all you gotta do is drop the pasta and you're good to go. This ragu packs a serious flavor punch and even gets better the next day. We served ours over a thick, chewy rigatoni, but would also be great over some creamy polenta.

Green Muffins

I know my toddler is supposed to be developing a taste for green vegetables at the moment, but that's hard to do when he prefers to throw them by the fistful on the floor....and then I found these muffins. Loaded with almond and flax meal and a full cup of both spinach and broccoli, these muffins give me a sigh of relief that my little guy is getting some sort of nutrition. They're even a great snack for parents - enjoy!

Pork Ramen Bowls

Our backyard chicken coop is up and running and we officially have not been able to eat chicken for about 2 weeks. Not sure how long our chicken strike is going to last, but for the time being we love our little ladies too much to eat their relatives.
Sooooo, pork shoulder has been very popular in our house lately....and any recipes we can throw eggs into. Nothing beats the ease of cooking a shoulder and ya cook once and have dinner for at least two nights. Saw Rachael Ray do this on her show last week and it made for two tasty weeknight dinners. Highly recommend!

Hawaiian Pulled Pork Burrito Bowls

Randomly found this great recipe idea for a pulled pork burrito bowl. It originally called for a crock pot (which I don't have) and then I forgot half the ingredients at the store and to my surprise I successfully adapted it into something super delicious! Chipotle-shmipotle!

Roasted-Chicken Bread Salad with Peas

Ever get a magazine subscription and not remember ordering it? Well, that happened to me with Martha Stewart Living and it resulted in me finding this dreamy chicken and bread salad dinner.
Yeah, I have the Zuni cookbook and it takes like three days to make their stellar recipe. I personally don't have time for that sh....stuff, so this Martha recipe was a winner. Totally delivers great flavors without the 3 day timeline.
I even used bone in, skin on chicken breasts instead of a whole chicken and threw in some green beans and fresh spinach to the mix.
