ZZ's Caesar Dressing

I know, it's so easy to just pick up a salad dressing from the grocery store. It's almost as easy to throw this one together and it tastes about a zillion times better. Makes such a difference with caesar salad because the dressing is definitely the star of the show. Just throw everything in your food processor and you're done! Thanks Mom!


Caesar Dressing
Recipe slightly adapted from Seasoned With Love by Suzanne Sweet and picture from http://www.mccormick.com/

2 cloves garlic
1 two ounce container anchovies in oil (reserve the oil)
4 tablespoons red wine vinegar
1/2 teaspoon dry mustard
1 teaspoon white horseradish
4 teaspoons fresh lemon juice
1/8 teaspoon salt
1/2 teaspoon pepper
dash of red pepper sauce such as Tabasco (optional)
3/4 cup vegetable oil (You need 3/4 cup oil total. I use the reserved anchovy oil plus the vegetable oil to get to the 3/4 cup.)

With the blade of your food processor running add each ingredient (in order) one by one until well combined.
