Chicken Sausage, White Beans and Kale

Clearly I am obsessed with Amateur Gourmet. I've made tons of his recipes and he somehow makes everything so easy and delicious. This recipe is no exception. It kinda tastes like a great soup/stew without the broth. It doesn't sound that exciting, but this sucker cooks up into a truly tasty weeknight dinner.

Chicken Sausage, White Beans and Kale

3 chicken sausages (recipe uses already cooked, I used uncooked Caggiano's and it was awesome)
1 onion, sliced think
1 carrot, diced
1 rib celery, diced
2 - 3 cloves garlic, sliced
1 can white beans, drained and rinsed
1 bunch kale, shredded
Juice of 1 lemon
salt

If using cooked chicken sausage, heat 1/4 cup olive oil in a large metal skillet over moderately high heat. Slice the chicken sausage into thick rings and brown in the olive oil. When nice and brown remove from skillet. (Since my sausages were uncooked, I browned them whole and cut them into rings once they were fully cooked and then set aside.)

Add onions, carrot and celery and sprinkle with salt. Lower heat. Cook until the onion develops a deep brown color. Then add the garlic.

When garlic becomes fragrant add the white beans. Now add the lemon juice. (Try to scrape and brown bits off the bottom of the pan when stirring.) Season with a bit more salt.

Add the sausage and kale to the pan. Season with a bit more salt and another squeeze of lemon juice and give everything a good stir. Cover and allow the kale to wilt for a minute. Enjoy!
